Our Chef, Ian Lipski, is very proud of what comes from his kitchen, and is always pleased when someone asks for his recipes. For now, try out this recipe the next time you have company, or even just for you and that special someone! Mexican Style Lentils 1 cup green lentils 1 bunch fresh basil, chopped 1 large onion, fine chopped & sautˇed 1 teaspoon ground cumin 2 large green peppers, small diced 2 teaspoons chili powder 2 cans diced tomatoes 1 chopped garlic 1 cup raisins Salt and pepper to taste Method Sautˇ onions and peppers until tender, add the chopped garlic, chili, cumin, basil, salt and pepper, and mix well. Add the diced tomatoes and green lentils. Cook until tender, finish with raisins and more chopped basil. Serves 4-6.
